1 kg mussels
1 shallot
5 garlic cloves
1 celery stalk
½ fennel bulb
200 ml dry white wine
300 ml heavy cream
2 tbsp chopped parsley
1 tsp curry powder
50 g butter
50 g crushed cashew nuts
Toasted French baguette for serving

Tender black mussels simmered in a creamy white wine and curry sauce, enriched with fennel and crunchy cashews. A flavorful dish perfect for sharing with a glass of wine and toasted baguette.

🍽 Instructions:
1️⃣ Melt the butter in a pot and sauté the shallot, garlic, celery, fennel, curry, and cashews for 5 minutes.
2️⃣ Add the mussels and wine, cover and cook for 3 minutes.
3️⃣ Pour in the cream and simmer for another 2 minutes.
4️⃣ Serve hot, garnished with parsley and toasted baguette.
